Make the most of CMSMS at tour agency

Hi there,
I'm CMS MS happy user for last few years, and now I'm stuck.
My very good customer wants to run his own tour agency - small one, specializing in skiing and snowboarding trips.

I'd really like to make it using CMS MS, but I'm not sure how to make resonable way.

Currently, there is a bunch of FormBuilder forms, collected in FormBrowser, then exported to Excel - to prepare customer agreement using FB data (made "by hand" right now).

Every one trip has it's own collection of different options, and that's the problem - maybe there is a better way to utilize CMS MS for such task. Some kind of e-commerce module maybe, where trip is a product, and trip options are product options? Does it sound sensible?
