Upgrade from older versions

I have two databases I want to upgrade to the newest version.
I have read as much of the documentation on this I can find and the release notes but nothing is really clear on how to do this.
Some of the docs mention upgrading version by version, the release noes for the latest version does not mention this.

Database 1 is v1.10.1

Database2 is 1.8.2

If someone could provide clear instructions on how to do this for each of the versions I have, or where to find them it would be most appreciated.
