Is there a way to change the default admin template?

Yes you can, but it is not as easy as changing the theme on the frontend.
You can find the themes in admin/themes. There is usually only once, but it looks from the code like you can set another theme in your user preferences (or mame the default theme, but then you are screwed when you mess up). You can find a plain .css file in admin/themes/default/css that you can change (for instance set the body fontsize to something less uncomfortable than 62.5%)

You could have answered that question yourself if you had looked at the source. If sourcecode scares you, then changing the admin theme is not for you.
