I have never used a real CMS before with the exception of Cushy a few times for clients.
I need to know if I'm heading down the right road with this.
I have a client who want to give the ability to edit text and some pictures on the website I'm going to design for them. Just to clarify, does CMS made simple allow me to design the site and then use the software to allow the client to change text? Or do I have to use a template provided by CMS made simple?
Do I have to take note of a set of parameters when designing the site to allow CMS made simple to work?

The cms doesn't limit you in any way regarding the templates. With content pages, content blocks and global contents you can make all content editable and still make sure they won't mess up anything.
The only thing you have to think about is if your website already contains some php programming - in that case it might be better to integrate it to the cms as a module.

you can look to Visual tutorial #3 on how to transform / import a template or a html page in a CMSMS template

cool, great video. What about the ease of use for my end user client who wants to go in and adjust text and maybe some pictures on the site?
What kind of interface will he see and can I limit what he can edit like font size and bold text. (This is what I hated about Cushy as the client would/could change the style and font size and ask me how to fix it)

Keep in mind that I'm a designer with HTML CSS experience but not any PHP knowledge really. The link to the demo seemed confusing as it didn't look like much was there. It said under construction.
I'm just wanting to be sure my client will be able to easily be able to navigate this and update his changes when he needs too. Is there a demo that shows that?

Go in Content > Pages
and click on page link or Add new Content
