backup and restore procedure please?

I am running cmsmadesimple for several of my websites.

I always backup all my projects in two parts:
1.the file structure via FTP
2.The database via sqldump

I have had to do an emergency restore once and Im sure I made a note of how exactly I went about it, but I cant find my notes anywhere.

Can someone please give me a short walkthrough on how to restore from backups in case of emergency? Many thanks.

backup/restore is essentially like moving a site to a new server
