I thought the SectionHeader might be used to make categories, but it appears to just affect the menu system. Lets say i want to make a category called Sports. Which i want to me a menu option (im only wanting a single level menu), when the user clicks on it, he is taken to a listing of articles within that cartegory. Maybe i even want to have "subcategories".
How should i accomplish this?

This should be moved, not sure which board it needs to be in...
Sounds like you need to use the News which has categories...
Make a News category called Sports with articles using sports as category, which can have sub categories, then make page called Sports and put news tag in content with category="sports"...
