Best way to handle form data

I need to have multiple pages with forms, get data from the user, save some in a database table, use form results together with earlier saved database values in to javascript (highchart and pdf).
What is best method to ”store” data between pages, forms and presentation in a chart/pdf?
Is it with $params and UDT, sessions, cookies, files, database or what?
