If you have a developement Server setup, why not?
Just like there are solution for WIN user called XAMP or WAMP there is also OSX solution called MAMP or even other.

If you have VMWare Fusion take a look at installing an OS on there. I just did this myself in order to replicate my live production server in order for me to test upgrading to php 5.3+ I installed 64 bit CentOS which if you have never used CentOS is a fantastic OS which with yum is a breeze to update. On top of this look into using Virtualmin and Webmin for setting up virtual servers and server administration. These are very powerful and much much better than something like cPanel as they don't affect the underlying system but reflect it.
The only tricky bit can setting up the networking so you can access it from the Mac via your browser or SSH. Doing it this way means you can set up multiple sites.
