Sorry, this seems like it should be such a simple thing ...but I don;t see a parameter for it in the search module definition.
The search box, by default, displays a label: "Search:" ....where/how can I change this text?

In "Extensions -> Search" Options -> Default search text, you can change the text that is displayed inside the field.
For label you can change it in the Search template:
