I am looking for a module that would allow easy upload of a thumbnail and description. It would then be displayed on a page with all (or a portion of) all the thumbnails with the description beside.
The goal is to allow an animal rescue society to upload current animals that are available for adoption with a little blurb about the animals.
Any ideas on what module would work best for this?

There's a module called 'cataloger'. It's a bit more than a simple thumbnail list, but it sounds perfect for what you're trying to do.
