Cloaking or stripping option for eMails addr's in Guestbook

Is it possible to create an optional check box next to the email entry field in Guestbook that would give the poster/guest the option of either cloaking or hiding his/her email from the published list, but still record it for the admin?

It sounds simple in my head... but my head is tired from coding all day.

IIRC is Guestbook showing the mailaddress cloaked already in the template by default....
