How do I change the default menu?

Hi All
I am a novice with CMS. I have tried a few systems and they have all been too complicated for me.. This one seems great...
I have reasonable understanding of html but nothing of php.. I would like to change the default menu that comes as part of the install to something like the one on the main web site http://www.cmsmadesimple.org/
How do I do that?
