Modifying header content for Form Builder Emails

I am using CMSMS 1.11.7 with Form Builder 0.7.3
Within Form Builder, I can see that there is a field type called "Email Results to set Address(es)", and within the "advance settings" tab, you can customize the HTML for e-mails.
...But is there also a place where we can add or modify the <head> content of the e-mail that is sent out from Form Builder?
Some of my motivation for considering this, is if you download an e-mail template from companies like http://mailchimp.com/, or http://www.campaignmonitor.com/, they make good use of adding various content within the <head> section of e-mail templates, so that more e-mail devices can read and interpret the e-mail.
For example, they add media queries in the <head> for mobile purposes.
I am basically trying to mimic their pattern within Form Builder.
Is this possible?
