I am wondering if there's a way to set a thumbnail for an album even if there are no photos in it.  At the above link, if you click on Interior Finish Details, you will see various sub albums.  I don't want to have photos in the Interior Finish Details album -- just the sub albums.  But I want to put a thumbnail on the Interior Finish Details group.  Is this possible?

You can mark one of the subalbums as the albumcover. That way it will inherit the thumb for that album.

If you want to use a completely other image as a thumb, you can upload an image and mark it both as inactive and as albumcover. That way the image will not be displayed, but the thumb for the album will.
