I've done that on a number of occassions without any issues.
As always though, backup EVERYTHING before you start: your old files and your database. Clear your site cache before you start too to reduce the number of files you need to backup/copy.
Remember that the core install won't contain any additional modules you installed, so you'd need to copy their files across. Also you mention the images folder, but it's the whole uploads directory really that needs copying if, like me, you have a lot of other things in there like files, galleries etc.
Remember too that uploading new folders will mean you lose any permissions/CHMOD customizations you did, so you'd need to reset them as per the installation instructions.
