Select FormBuilder option by default?

Wondering how to have one option in a pulldown selected by default, with a FormBuilder form. Can anyone help? I'm using the 'email results based on pulldown' field.
I have a form at the following URL that asks users to select a department, if known, or a name, from 2 dropdowns. But I want the form to send it to a certain email address by default, if the user doesn't select a name or doesn't know who to choose.
