Ive looked through the api doc and cant find a way to create a drop down like createInputDropdown that allows
Is there a way to do this I couldn't find?

No, there's nothing in the API for this at the moment.

But it'd be interesting to modify CreateInputDropdown to support this, without breaking what we have.
