Main and sub navigation question

Hey guys!
I recently installed CMSMS and am very impressed with what I've seen so far. I currently have a website online that I'm thinking about converting to CMSMS. I have made a start on recreating the template and importing the css but am having problems with the navigation. The original site (without CMS) is located at:

I've tried reading up on things like the menumanager and templates etc but am having trouble understanding exactly how the menus work. I basically need to recreate the navigation found on the non-CMS website but cannot figure out how to do it
I tried using the hierarchy user created tag found on one of the help pages and although this improved things by correctly displaying the submenu links down the left hand side, they also appear in the main navigation which is not what I want.
I know it can be done, and its probably really easy lol
If someone could run me through exactly what I need to do in order to recreate the navigation at http://www.osscltd.co.uk I'd be very grateful!!!
