Moving sites while a server is offline

so my old server HD got a worm in the OS, and my server company wont let it back online.

I have about 15 CMSms sites on there. I can get to all the files via SFTP, and copy them, but I can not clear the admin cache, or do a mySQL dump (i dont think). Any other ways to get that data onto the new server?

I am not the biggest sever / linux guy, so even a mySQL dump is a bit over my head. Right now I am moving all my files over, and can copy the mySQL folders as well.

So I have figured out what files in mysql to copy. and I have got it to work on a few sites. but some sites, after I chmod the right files, show me blank pages. I can get into the admin, but thats it.
