I noticed that diacritics are now possible in URLs.
Any option giving the possibility to remove them by default would be great.

No. extended (unicode/utf-8) characters are now supported in domain names, and in tld's... and the browsers support extended characters.
One of the new features in 2.0 is support for extended characters in URLS.
and since the code that does that is shared by modules (including third party modules) we will not be adding an option to disable that functionality.

Mmmh, having the experience of a blog system using it, the overall support for this feature is not so strong, especially when sharing links on social networks.
