You should certainly take a look at the ListIt2 module!

However, you should be able to maximize the count(?) of photo's the end user is allowed to upload.

Maybe the Gallery module also suites your needs.

Or look at Cataloger modules. I did not yet use any of those.

I think Gallery can cover all your needs on this one...

Each project consists of a subgallery, you can define gallery-related custom fields for all your projectdata

I just used Module Generator to build a slick Projects app. It does exactly what you describe. Took me one evening to get the job done. Great Module!

You don't have to understand anything about PHP to get Module Generator to work.
Simple steps are:
Create new module, Just give it a name you like and press submit.
You see some code scrolling over your screen and then the project appears in the list. At the right hand site you will find the hyperlinked "install", just press it and voila, your app will be listed under Content.
Start your new app and add fields as you like. Zero coding involved!

You may dislike the results of the sample templates as to how the pages are rendered but these templates are fairly easy to customize. Just add a new template and it will start with a default.

I'm assuming you've already finished this job long ago, but you could just use ListIt2 which allows you to add your own fields of any type (e.g. input, textarea, Gallery selection) and then format the templates to your heart's content.
