I assume you have defined the Content Type of the main-menu-page as 'Content'.
If you change that to 'Internal Page Link' the mask changes to give you a field named Destination Page: There you can specify the first page of the submenu as destination and there you are

How about the firefox addon It's All Text! at https://addons.mozilla.org/de/firefox/addon/its-all-text/ ? You can specify the editor you want to use and get an edit button if you mouse over a text area. By clicking it opens the content of the text area in the specified editor, by saving it it writes...

For that you must adjust your page template. Like the good Dr. said, if you edit your template(s) there is somthing like <title> {sitename} - {title} </title> in your <head> section. That's not strange, it's because IE is such a crappy piece of software. It did not follow the rules of CSS, so your site looks like crap if you didn't spend extra hours to work around its quirks
