After getting the mcryp php module installed I managed to get passed this issue, however it seems that a conflict with the Products module is giving me a bigger issue.

So I've completely removed the site and done a clean install, setting it up again one page and module at a time. Looks like the issue is being generated by a conflict with the Products module.
