The attribute manager isn't on the page where you edit an individual product. You can access it from the "Products" tab -- where the individual products are listed.
The link is on the left next to the Edit & Trash icons. (I highlighted it on the screenshot.)

Is it possible to make a sort of subcategory. It would work using fields but then i need something lige {Products myfield='myfieldvalue'}. Can that be done? Do you want a product be in more than one "sub-category" at a time? Are you already assigning Hierarchy positions? If not, than that...

[update: this was fixed in the 2.0.1 release] I filed this as a bug, but I thought I'd share my solution here as well...
