Hi I'm trying to make a menu/list of news.
Something like:

- date - news1 title
- date - news2 title
- date - news3 title
...etc etc

and the news title links to the news article page.
No matter what I do I get summary/article under the title. Somebody please help me out thank you.

Just edit the News summary template and remove everything but the date and the title.

I'm using the summary template for the homepage. When the visitor clicks on the news title on homepage (summary template) it takes them to the detail/article page.
On the detail/article page I want a list of all the news on the left for navigation. How can i achieve this??

for your detail page use a template that has {news} in the left sidebar.

When I add {news} it adds all the date, title, and article. I just want to display the date and title....
If I edit the summary template to only show date and title, it only shows date and title on the homepage as well...
Is it possible to have date, title and summary on homepage and just date and title on the left hand side menu on detail page?

You just need to create multiple summary and/or detail templates as needed, then call the appropriate one in your {news} module call(s).
